Aioli
Ingredients:

2 egg yolks.
-
4 cloves
garlic, crushed.

250ml extra
virgin olive oil.

2 teaspoons
lemon juice.
- 1/2
teaspoon Dijon mustard (optional).
- Salt &
pepper to taste.
Method:

All ingredients should be at room
temperature prior to making.

Grind garlic with a pinch of salt to make a
paste.

In a food processor, add the
garlic paste, lemon juice, egg yolks & Dijon
mustard (optional) together until well
combined & the yolk lightens & thickens
slightly.

With the motor running, very
slowly add the olive oil
-
Add salt & pepper to taste.
-
Refrigerate until required.
Note:
Pregnant women should avoid
products containing raw egg yolk.
