Aioli

Ingredients:

  • 2 egg yolks.
  • 4 cloves garlic, crushed.
  • 250ml extra virgin olive oil.
  • 2 teaspoons lemon juice.
  • 1/2 teaspoon Dijon mustard (optional).
  • Salt & pepper to taste.

Method:

  • All ingredients should be at room temperature prior to making.

  • Grind garlic with a pinch of salt to make a paste.

  • In a food processor, add the garlic paste, lemon juice, egg yolks & Dijon mustard (optional) together until well combined & the yolk lightens & thickens slightly.

  • With the motor running, very slowly add the olive oil

  • Add salt & pepper to taste.

  • Refrigerate until required.

Note:

Pregnant women should avoid products containing raw egg yolk.
