ANZAC biscuits

Ingredients:
- 1 cup
plain flour, sifted
- 1 cup
rolled oats
- 1 cup
caster sugar (brown sugar can also be used)
- 1/2 cup
desiccated coconut
- 125g sugar
- 2 tbsp
golden syrup
- 1/2
teaspoon bicarbonate of soda
- 1
tablespoon boiling water
Method:

Preheat
oven to 180°C.

Sift the
flour into a large bowl, add rolled oats,
coconut & sugar & mix to combine.

In a
small pan over a low heat, melt the butter &
golden syrup together.

Mix the
bicarbonate of soda with a tablespoon of
boiling water, add to the melted
butter/syrup, add to the dry ingredients &
mix well.

Line a
baking tray with baking paper. Place one
tablespoon (around the size of a walnut) of
the mixture onto the tray, allow enough
space to allow for the mixture to spread
while cooking.

Bake for
15 to 20 minutes.

Place on
a wire rack to cool.
