Ingredients:

Olive oil.

300g beef mince.

150g pancetta,
finely chopped.

1 onion, finely
chopped.

4 cloves of
garlic, finely chopped.

50g carrot, finely
chopped.

50g
celery, finely chopped.
-
1/2 cup of red or white
wine.
-
30g (approximately 1 tablespoon) tomato paste.
-
200ml beef stock.
-
150ml milk.
Method:
-
In a frying pan
add pancetta, carrots, celery, onion & garlic,
stir until soft.
-
Add mince & cook
until browned then add wine.
-
Add tomato paste &
beef stock.
-
Season with salt &
pepper & simmer for 2 hours, occasionally adding
a dash of milk to the mix.
-
Serve with
tagliatelle.
