Ragł alla bolognese (Bolognese sauce)

Ingredients:

  • Olive oil.

  • 300g beef mince.

  • 150g pancetta, finely chopped.

  • 1 onion, finely chopped.

  • 4 cloves of garlic, finely chopped.

  • 50g carrot, finely chopped.

  • 50g celery, finely chopped.

  • 1/2 cup of red or white wine.

  • 30g (approximately 1 tablespoon) tomato paste.

  • 200ml beef stock.

  • 150ml milk.

Method: 

  • In a frying pan add pancetta, carrots, celery, onion & garlic, stir until soft.

  • Add mince & cook until browned then add wine.

  • Add tomato paste & beef stock.

  • Season with salt & pepper & simmer for 2 hours, occasionally adding a dash of milk to the mix.

  • Serve with tagliatelle.
