Bread Sauce

Ingredients:

  • 1 small onion, peeled & quartered

  • 6-10 whole cloves (depending on taste)

  • 2 cups of milk

  • 2 1/2 cups of fresh white breadcrumbs

  • 50g butter

  • 6 whole peppercorns

  • 1/4 teaspoon nutmeg

  • 2 tablespoons of thick cream

  • 1 bay leaf

  • Salt & pepper

Method:

  • Press the cloves into the onion

  • Add the milk to a pan, add the onion, peppercorns, bay leaf & a pinch of salt. Bring to the boil.

  • Remove from heat, cover & set aside in a warm spot for 1 hour to let the flavours infuse.

  • Remove the onion, bay leaf & peppercorns.  

  • Place pan back on the heat (low setting). Add breadcrumbs to the saucepan, mixing well until the sauce thickens.

  • Stir in butter, thick cream & nutmeg.

  • Add salt & pepper to taste.

Serve with:

Roast chicken or roast turkey.
