Buttermilk Pancakes

Ingredients:

  • 2 cups of plain flour

  • 2 teaspoons of baking powder

  • 1 teaspoon of bicarbonate of soda

  • 2 eggs, lightly whisked

  • 2 cups of buttermilk

  • 1 teaspoon vanilla essence

  • 2 tablespoons sugar

  • Pinch of salt

Method:

  • Sift all dry ingredients into a bowl.

  • Make a well in the centre & pour in slowly add vanilla essence, buttermilk & eggs. Mix the mixture until smooth.

  • Over a medium heat, preheat a non stick frying pan & add butter. When melted, add 1/3 cup of pancake mixture & heat until bubbles appear on the surface (usually 1-2 minutes). Turn pancakes over & cook for a further 1-2 minutes.
