Caesar Dressing

Ingredients:

  • 1 egg

  • 2 cloves of garlic, crushed

  • 1/2 teaspoon dijon mustard

  • 2 drained anchovy fillets, finely chopped

  • 1 cup (250ml) olive oil

  • 2 tablespoons lemon juice

Method: 

  • Add egg, garlic, mustard & lemon juice in a blender & process until smooth.

  • Gradually add the oil in a thin, steady stream, whisking until the mixture thickens slightly.

  • Stir in juice.
