Carrots Roasted

Ingredients:

  • 6-8 medium sized carrots.
  • 4-6 cloves of garlic, unpeeled.
  • Cooking oil.
  • Salt & pepper to taste.

Method:

  • Preheat oven to 200C.
  • Meanwhile, peel the carrots & remove the ends. Cut in half lengthways.
  • Place the carrots & garlic cloves in a single layer in a roasting dish. Drizzle with cooking oil.
  • Season with salt & pepper. *
  • Roast, uncovered for approximately 45 minutes. Until soft and golden.

Notes:

  • If desired, you can add a sprinkle of herbs to the carrots.
  • A drizzle of maple syrup or honey goes really well with roast carrots.
