German Potato Salad (Kartoffelsalat)

Also known as 'kartoffelsalat' or 'warm potato salad' this is a popular potato salad recipe in Germany.

Ingredients:

  • 1kg red potatoes.
  • 4 slices of bacon.
  • 1 small onion, finely diced.
  • 1/4 cup of cider vinegar.
  • 1 tablespoon Dijon mustard.
  • 1 teaspoon sugar.
  • 1 teaspoon salt.
  • Chopped parsley (optional).

Method:

  • Boil the potatoes in salted water in their skins until tender. Once cooked, allow to cool, peel (if desired), and cut into thick slices.
  • Chop up the bacon & fry. Set aside, leaving the bacon drippings in the pan.
  • Fry the onion in the bacon drippings until they are transparent.
  • Add vinegar, sugar, salt & mustard to the onion mix. Simmer for 10 minutes.
  • Pour vinegar/onion mix over the potatoes.
  • Top with crumbled bacon & parsley (optional).
