German Potato Salad
(Kartoffelsalat)
Also known as 'kartoffelsalat' or 'warm potato
salad' this is a popular potato salad recipe in
Germany.
Ingredients:

1kg red potatoes.
-
4 slices of bacon.

1 small onion, finely diced.
-
1/4 cup of cider vinegar.
-
1 tablespoon Dijon mustard.

1 teaspoon sugar.
-
1 teaspoon salt.
-
Chopped parsley (optional).
Method:

Boil the potatoes in salted water in their
skins until tender. Once cooked, allow to
cool, peel (if desired), and cut into thick
slices.

Chop up the bacon & fry. Set aside, leaving
the bacon drippings in the pan.

Fry the
onion in the bacon drippings until they are
transparent.

Add
vinegar, sugar, salt & mustard to the onion
mix. Simmer for 10 minutes.

Pour
vinegar/onion mix over the potatoes.
-
Top with
crumbled bacon & parsley (optional).
