Broccoli

Preparing
broccoli:
When selecting
broccoli, look for firm, tight, green florets.
Avoid soft/floppy broccoli or florets with a
yellow tinge.
Preparation of
broccoli is fairly simple;
-
Wash
thoroughly under cold water.

Place broccoli
on a clean chopping board & using a sharp
knife, cut it into manageable sized florets.
Leaving 1-2cm of stalk.
Boiling:
-
Bring a pan of
salted water to the boil. There should be
enough water to just cover the broccoli.

Carefully add
the broccoli florets (being careful not to
splash yourself with hot water).

Simmer until
the broccoli is a bright green colour
(usually around 5 minutes), and it is
tender. Test with a knife.
Steaming:
-
Place a
steaming insert into a pan of water & bring
to the boil.
-
Place broccoli
florets into the steamer insert. Make sure
the water is not in contact with the steamer
insert.
-
Cover & cook
for 5 minutes, until bright green & tender.
Microwaving:
-
Place broccoli
florets in a microwave safe dish.
-
Add two to
three tablespoons of water over the
broccoli.
-
Cover &
microwave on high for 3-5 minutes until
bright green & tender.
