Lentil dhal

 

 

 

 

 

 

 

 

Ingredients:

250g red lentils.
30g butter or ghee.
1 large onion, finely sliced.
2 cloves garlic, finely chopped.
2 small fresh chilis, chopped finely.
1 teaspoon finely grated fresh ginger.
2 teaspoons ground turmeric.
1 teaspoon cumin.
1/2 teaspoon garam masala.
3 cups vegetable stock.
1 teaspoon salt, or to taste.

Method:

  • Cover lentils with water in a large bowl, stand covered, overnight.

  • Heat butter or ghee in a large pan, cook onion, garlic, chili & ginger until onion is translucent.

  • Add salt (to taste), turmeric, cumin & garam masala, stir well.

  • Add drained lentils & fry for 2 minutes.

  • Add vegetable stock & bring to boil.

  • Reduce heat, cover & simmer for 20-30 minutes until mixture is thick.

Serve with chapatis.
