Orange Cake

Overview:

  • 250g butter, at room temperature.

  • 250g self raising flour.

  • 250g caster sugar.

  • 4 eggs, lightly whisked.

  • 250g self raising flour .

  • 80ml orange juice.

  • Zest of one orange.

Method:

  • Preheat oven to 170C.

  • Cream butter & sugar in a large bowl or electric mixer until pale.

  • Crack eggs into a small bowl & lightly whisk. Slowly add the eggs to the butter/sugar mix, continually stirring.

  • Add the orange rind & mix well.

  • Sift in the flour, fold in well.

  • Add the orange juice.

  • Pour into an 8 inch square cake pan & cook for 45 minutes, or until golden.
