Potato wedges
Ingredients:

1kg medium potatoes (Desiree Sebago, King
Edward, Coliban or Russet).

1/4
cup
light olive oil.

Cajun seasoning (optional).
-
Salt & pepper to taste.
Method:

Preheat oven to 200˚C.
-
Scrub potatoes well & dry.
-
Cut each potato into wedges (around 6 wedges
per potato)

Toss potato wedges in a large bowl with the
oil.
-
Place potato wedges on a lightly greased
baking tray. Season with salt & pepper, plus
Cajun seasoning (optional) & bake for
approximately 40 minutes or until crisp.
-
Serve with sweet chili sauce & sour cream.
