Roast Beef Recipe

A family
favourite, roast beef with Yorkshire pudding,
roast potatoes & your choice of vegetable is a
popular roast.
There are several
cuts of beef you can choose from, such as
sirloin joint or rib roast (also known as
standing rib roast), rump, silverside, topside.
When buying look for one with some marbling
throughout & a thin layer of fat on the top. The
fat will provide basting juices & also prevent
the beef from drying out during cooking.

Perfect Roast Potatoes
Ingredients:
-
2kg beef roast
(sirloin joint or rib eye).

1 tablespoon
wholegrain mustard.

3 cloves of
garlic.
-
1 onion
chopped into quarters.

3 tablespoons
olive oil.
-
Salt & pepper
to taste.
Method:
-
Preheat oven
to 240°C.
-
Heat some oil
in a frying pan & brown the beef.
-
Once browned,
cut a small onion in half & place beef on
top of onions in baking dish.

Brush mustard
onto the top (fatty side) of the beef &
season with salt & pepper.

Baste
occasionally with pan juices to help keep
moist.

Cook for 20
minutes at 240°C then reduce the heat to
190°C. Allow 30 minutes per kg for rare
beef, 45 minutes per kg for medium & 60
minutes per kg for well done.

Once cooked
remove from oven & cover in foil & allow to
stand for 20-30 minutes before slicing. This
allows the meat to relax, making it easier
to carve & enhancing the flavour.

Serve with
gravy, roast potatoes, Yorkshire pudding &
vegetables.
