Salad Sandwich
Ingredients:

2 slices of bread.
-
1-2 lettuce leaves (enough to cover the
bread).

1 tomato, sliced.
-
6-8 slices of cucumber.
-
¼ red onion, finely sliced.
-
1 tablespoon mayonnaise.
-
Butter, at room temperature.
-
Salt & pepper to taste.
Method:
-
Butter one side of the two slices of bread.
-
Wash & pat dry the lettuce leaves, place on
buttered side of one slice of bread.
-
Add the cucumber, making sure you cover the
entire area.
-
Add the tomato, making sure you cover the
entire area.
-
Add a small amount of sliced onion
(according to taste).
-
Season with salt & pepper.
-
Spread a layer of mayonnaise on buttered
side of the remaining slice of bread. Place
on top of the salad.
-
Slice in halves of quarters.
Extras:
-
Cheese slice.
-
Replace mayonnaise with cottage cheese or
cream cheese.
-
Egg mayonnaise.
-
Alfalfa sprouts.
-
Thinly sliced radish.
-
Thinly sliced capsicum.
-
½ avocado, mashed.
-
Cold, sliced meat such as ham, chicken,
salami, beef.
-
Sandwich pickle such as Branston.
