Roasted
tomatoes

Ingredients:
-
8 roma tomatoes.
-
4 cloves
of garlic, peeled & finely chopped.
-
Extra
virgin olive oil.
-
1
tablespoon sugar.
-
1/4 cup
of fresh basil, finely chopped.*
-
Salt &
freshly ground pepper to taste.
Method:
-
Preheat
oven to 160°C.
-
Wash
tomatoes & cut in half lengthways.
-
Line a
tray with baking paper, place tomatoes cut
side up.
-
Place the
oil, basil, sugar & garlic in a bowl.
Mix well. Spoon a small amount of the
mixture over the tomatoes.

Season
with salt & pepper.
-
Place in
oven & roast for approximately 50-60
minutes, until soft & lightly charred on the
edges.
Notes:
-
You can
use herbs you choose such as rosemary, thyme
& oregano.
-
You may
also wish to sprinkle a small amount of
balsamic vinegar on the tomatoes at the same
time you add the basil/sugar/garlic.

Tomatoes
that have been roasted are a great addition
to salads. You can also eat them as is, or
on crusty bread.

Sprinkle
a little feta or parmesan over the tomatoes
prior to placing in the oven.

You can
also roast baby/grape tomatoes. Wash, &
place whole on a roasting tray. Cook for
15-20 minutes. Roasted baby tomatoes go
beautifully in salads.
